Less than a month left!

I can't believe it. I have a week of classes, dead week, finals week, then I'm home free! Where has this school year gone? Where is 2010 going??? I'm still rockin' the whole "new year's resolution" track.

For my bday (which was last Friday) my lovely family got to come visit for Mom's weekend. I didn't realize it at the time, but my birthday also marks the 1 year bday of this blog! Though it doesn't really count, because I didn't start continually blogging until this year, but it can still count.

Here are a couple photos of what I've been up to for breakfast lately. The battery on my camera is dying so I haven't been taking any photos these past few weeks :o but I'll get those replaced and get rolling again. I really like looking back at my old posts for food inspiration!

Eggies eggies eggies

OATMEAL!

Long story short: I have (or had) 4 eggs that will expire this week, and I did not get around to using them this week, so I needed a way to eat them!

So.. I put one in my oatmeal this morning!

1/2 cup oats + 1/2 cup skim milk left in fridge overnight covered..

then I added a raw egg this morning, and microwaved for 30 seconds, stirred, then 50 seconds, stirred, then 20 more and it was all cooked!

1 banana + 1 tbs pb + cinnamon + more milk (the egg made it almost solid) and we're ready to go. Yumi!

At right around 500 calories, this is a pretty rich breakfast, but I need it to last me from 8-1 with a workout tossed into the mix. I hope it holds!

Breakfasts of the Weekend

I want to devote a single post to the cooking of yesterday, so I'll put the two breakfasts from the weekend in this one!

Yesterday I tried something new. I keep reading how instant oats really aren't comparable to their whole counterparts, but there is no way I'm going to go downstairs and cook oatmeal in the dorm kitchen for breakfast.

What I did: mixed 1/2 cup old-fashioned oats with 1/2 cup skim milk and let sit covered in the fridge overnight. The next morning I put it in one of my bowls, microwaved it at 20 and 30 second intervals stirring after every time, until they were all warm and slightly puffy! This was about 1-2 minutes, so not too long. Then I stirred in a banana and added a Tbs. peanut butter on top!

This morning I went back to an old favorite: greek yogurt, banana, and cereal. Good as usual!


After breakfast this morning I tackled some Spanish homework then did level 2 of the SHRED!

Week Recap!

Ahh this week has been so crazy and I LOVE it. I love having to be somewhere and having something to do. I've been so busy, that I have not blogged once (as you may well have noticed)! I did take photos of some of my food though for the week. Here it goes, in no particular order.

Canadian Idiot

I'm watching curling and doing homework!

I started the day off right with pumpkin/banana/raisin/peanut butter oats again, with a sprinkle of cinnamon. 2.5 servings of fruit- woot!



Then blah blah blah lots of classes blah blah blah.. 

the lunch! I was planning on a different lunch today- but plans changed! So I did too. I had a slice of cheese pizza with two huge bowls plain spinach. I ate the spinach WITH the pizza- taking a big forkfull of spinach and a small bite of pizza. It was so amazing! I definitely recommend. And it kept me below 400 kcal for lunch. 



Then I went to the Spanish advisor to figure out what classes I'll get credit for in Ecuador. I will get a total of 12 credits and am now a double Spanish/Pharmacy minor. Wow. I was shocked/excited/overwhelmed- and I can't wait!

Before going to teach (!!!) Gravity, I had an apple and a muffin with cream cheese while gabbing with my parents on the phone about all the Spanish/Ecuador news.


I also had two small dark chocolate squares for some extra antioxidants ;)



Gravity went so well! I'm loving that class more than I ever thought I would, and I hope I get to teach it.

Dinner was an egg/cheese quiche, green beans and a glass of milk!


Everything was very tasty, but I'm not sure if I've had enough to eat today! I might have a small bit of greek yogurt later tonight, but I'll just see how I'm feeling.

Yoga, Zumba, & Belly Dancing

Ugh. I was so lethargic today- I don't know what's going on. Maybe there's a low pressure or something, but even after more than eight hours of great sleep I still felt so sleepy!

Instead of my belly dancing class I usually have in the afternoons, I went to yoga. Then I took a nap!

Before yoga my tummy was still a little hungry so I had an ounce of cheese to hold me through.


Then after yoga + my almost two hour nap (!) I had a bown of 1/2 cup greek yogurt, a banana, and 1 cup of Kashi Good Friends cereal. So good! The texture is amazing, and so is the flavor. 



Smooth, crunchy, and banana texture... 


Even after my nap I STILL felt so tired! I seriously considered skipping Zumba, something I don't take lightly. I came to the conclusion that I have never regretted going to class no matter how I have felt, so I decided to give it a go.

AWESOME IDEA. They moved class back up into the mirrored room, which is always more fun, and class felt so great. I sweated a ton and felt so much better! 

{and I got to wear my new tank top- wearing lace to class makes me feel ultra confident!}



I packed myself a dinner for after class. Before, I wasn't eating much after exercising, but after researching and reading I realized that the body needs food to refuel, build muscle, etc, etc.. SO! I made a peanut butter and jam sandwich. Yum yum.

I studied Spanish and finished that homework before belly dancing class, which was fun as always!

Figuring out how to use pumpkin

My pumpkin oatmeal actually tasted good today!

I mixed 1 packet oatmeal, 1/4 cup pumpkin, a banana, a couple tbs. of raisins, and a tbs. peanut butter on top! The bananas and raisins made it sweet, and the peanut butter was an amazing compliment, plus adds protein for staying power. Woohoo!

Nothing can beat homemade raspberry jam. I ALMOST got lunch at hillside today, but decided to see if my package arrived first. BEST DECISION ALL DAY. It was full of Cliff bars (yayy!!), raspberry jam, an awesome tank top, and face wash. Thank you!!!

I made an open-faced crunchy almond butter and jam sandwich with an apple and glass of skim milk!

Dang the apple was tart- I think I'll stick to fuji from now on!
