Week Recap!

Ahh this week has been so crazy and I LOVE it. I love having to be somewhere and having something to do. I've been so busy, that I have not blogged once (as you may well have noticed)! I did take photos of some of my food though for the week. Here it goes, in no particular order.

Cereal + banana + greek yogurt

Pop pop pop pop CAKE!

I slipped up! Eek!! While watching curling we had some organic popcorn (this is not the slip up) that I got in my care package- it was delicious! Three of us ate the whole bag, but that's only about 120 kcal a person. And it was soo tasty.


Then trouble came in the form of cake! A girl from our hall was making cakes for tonight's event, and she would cut the tops off of the cakes to flatten it, and four of us definitely chowed down. It was really yumi and so hard to resist!


I was planning to have a rest day today, but after cake I had to get my butt to the rec! Especially since I'll be sitting in a classroom ALL DAY TOMORROW. And I have to miss Zumba! So I went to a class this morning. It wasn't particularly heart-pumping, but it got me out of bed at a decent hour and was some form of exercise at least.

I had pumpkin/banana/oatmeal/peanut butter/raisin/cinnamon goodness again today- I'm addicted, and the pumpkin is almost gone :(

I'm off to a basketball game and a Scotty Co. Block Party! Should be fun, and I'll definitely be planning fewer calories this afternoon so I can have some goodies tonight.

Canadian Idiot

I'm watching curling and doing homework!

I started the day off right with pumpkin/banana/raisin/peanut butter oats again, with a sprinkle of cinnamon. 2.5 servings of fruit- woot!



Then blah blah blah lots of classes blah blah blah.. 

the lunch! I was planning on a different lunch today- but plans changed! So I did too. I had a slice of cheese pizza with two huge bowls plain spinach. I ate the spinach WITH the pizza- taking a big forkfull of spinach and a small bite of pizza. It was so amazing! I definitely recommend. And it kept me below 400 kcal for lunch. 



Then I went to the Spanish advisor to figure out what classes I'll get credit for in Ecuador. I will get a total of 12 credits and am now a double Spanish/Pharmacy minor. Wow. I was shocked/excited/overwhelmed- and I can't wait!

Before going to teach (!!!) Gravity, I had an apple and a muffin with cream cheese while gabbing with my parents on the phone about all the Spanish/Ecuador news.


I also had two small dark chocolate squares for some extra antioxidants ;)



Gravity went so well! I'm loving that class more than I ever thought I would, and I hope I get to teach it.

Dinner was an egg/cheese quiche, green beans and a glass of milk!


Everything was very tasty, but I'm not sure if I've had enough to eat today! I might have a small bit of greek yogurt later tonight, but I'll just see how I'm feeling.

Figuring out how to use pumpkin

My pumpkin oatmeal actually tasted good today!

I mixed 1 packet oatmeal, 1/4 cup pumpkin, a banana, a couple tbs. of raisins, and a tbs. peanut butter on top! The bananas and raisins made it sweet, and the peanut butter was an amazing compliment, plus adds protein for staying power. Woohoo!

Nothing can beat homemade raspberry jam. I ALMOST got lunch at hillside today, but decided to see if my package arrived first. BEST DECISION ALL DAY. It was full of Cliff bars (yayy!!), raspberry jam, an awesome tank top, and face wash. Thank you!!!

I made an open-faced crunchy almond butter and jam sandwich with an apple and glass of skim milk!

Dang the apple was tart- I think I'll stick to fuji from now on!

Avocados + Me {A love story}

It is impressive how much my taste buds have matured these past few months. Seriously. Some of my new favorite foods (that I wouldn't touch before) include

-onions
-AVOCADOS!!
-broccoli
-peppers!
-cream cheese
-cottage cheese
-fish

and so on and so forth. wow.

Speaking of avocados, I got one from a hall spa day! We made avocado face masks, and there were some leftover avocados that hadn't been cut up yet. I grabbed one and ran. Okay, no, they gave me one, but still!

I sliced it on top of the last piece of egg casserole for dinner last night and saved the other half for today's lunch. Amazing!


Today's Breakfast Mission: use more pumpkin! I made a packet of instant oatmeal with 1/4 cup pumpkin, 10 chocolate chips, cinnamon, and a spoonful of almond butter. It was okay, not amazing, but not bad. It only came in at about 250-300 calories though, and I knew I'd need more than that to hold me through all of my morning classes. So I had a TINY bowl of cereal with milk!

Detail on the oatmeal. Now that I think about it, it was actually pretty good.


Lunch with leftover avocado is my favorite. I brought the avocado and my bread to lunch, and loaded my sandwich up with two small pieces of chicken (very small- for flavor), and a bunch of spinach and mushrooms for bulk and nutrients, but not too many calories! I also had some broccoli.

Ahh. Snack: mahi mahi fish tacos from Carlita's in the CUB. Apparently they're only 260 calories, so a good snack size, plus it helps get in fish for the week. They were packed full of lettuce, onions, and tomato pico de gallo with hot fish in the bottom and just a sprinkle of cheese on top. YUM.


And finally... Dinner! I'm rocking the apple with a muffin and cream cheese again. This is well on its way to becoming a favorite meal.

Beautiful Day

The sun is shining!

The grass is green!

The month is February??

Yeah, I'm still confused. Confused, but definitely not complaining :)

I got up this morning at 8:30 (crazy early for a college kid on her day off!) so I could go get more Study Abroad stuff taken care of. This process is so crazy!

For breakfast I wanted to use more pumpkin, and I thought that a pumpkin-yogurt combo sounded good. This wouldn't be enough to hold me through the morning, though, so I added toasted almonds.

It looks gorgeous! But tasted WEIRD. I would not recommend this! I toasted the almonds for too long, so they ended up tasting like popcorn, and the pumpkin and yogurt clashed flavors. The texture was nice though and kept me full for quite a while!


After breakfast I met with my honors advisor to get classes approved for study abroad, got passport photos taken for an ID card, got a medical physical clearing me to go to Ecuador, scheduled a vaccination appointment, and made it to the Study Abroad Office to ask a few remaining questions. Ahh!

Soon it was time for lunch! I went with the turkey, veggies, and a cranberry-apple orzo, all of which were quite tasty. The orzo was sweet from the apples and dried cranberries! yum yum

Sunday Fud

Breakfast! Is possibly my favorite meal of the day. Today was no exception. On the menu: pumpkin oats with honey and a pumpkin muffin!

I made instant oats like usual with boiling water, then stirred in 1/4 cup pumpkin.


I broke up the bottom half of the muffin to put on the oats.


Then used the remaining oats to "frost" the top of the muffin!



Yay! There's my beta-carotene for the day :)
