Finally Home

Wow this summer went fast. Before I knew it I was on the plane headed back to my family, the states, and my new apartment. I will have pictures of the apartment coming soon, but first I want to show you what I've been up to in our little kitchen!

Last night: homemade marinara + whole wheat organic penne + bed of spinach + glass of skim milk


Today's Breakfast: french toast + peanut butter + banana + drizzle of syrup


For lunch today: pan fried tilapia + spinach + pat of butter


Amazing.

p.s. I use "lunch" sized plates, so portions appear rather large in photos. Just a heads up!

Operation Eat it Before Spring Break: Starting NOW!

So.. I have muffins, eggs, apples, oranges, bread, almond butter, jam, peanut butter, tomatoes, and onion, and various cheeses that I need to eat so they don't go bad when I come home for spring break! So long dining centers- I'll be eating in my dorm room the next week and a half!

Dinner was AMAZING tonight:

Almond Butter + Jam (a TON of both :) )


with a blood orange!

For breakfast I had the egg/banana/oats/PB combo again. Seriously I'm in love!


I had other food today, obviously, but I'm tired and just want to post what I had last night for dinner after Zumba. Pasta and milk!! So good.

BEST OATS EVER!

I'm so excited. This morning's oatmeal seriously tops them all!

Allowed to soak overnight: 1/2 cup old fashioned oats + 1/2 cup skim milk

This mix was reheated for 30 seconds in the microwave today before 1 egg and 1 banana (in pieces) was added. Then it was microwaved for a 30 seconds, stirred, then 1 minute, stirred, and a final minute.

The egg got cooked (but you really can't taste it) and the banana turned to a sweet, sweet mushy goodness. It was so much sweeter this way!

Then a tablespoon of peanut butter and some cinnamon and ta-da!! It's aroung 470 kcal, which again is more than usual, but something about the added egg/old fashioned oats combo makes it stick around in my tummy so much longer. Usually I'm STARVED by lunch! I hate that, because then I tend to want to overeat.



I finished this off with some iced coffee and milk leftover from yesterday.

Oh, and here's my dinner from last night!

Sausage and Bell Pepper Pasta

Thanks Mom and Caroline for this awesome recipe! 

 3 bell peppers, red and yellow (I used red, yellow and orange)
4 TBS extra virgin olive oil
2 TBS chopped onion
4 sweet sausages, cut into 1/2 inch pieces
Salt and Pepper
1 cup canned tomatoes, chopped and drained
1 pound-1 1/2 pounds dried pasta
For tossing the pasta:
1 TBS butter
2/3 cup freshly grated parmesan, plus more at the table.
1. Split the peppers into 4 sections, discard the seeds and cores, and peel them.  Cut them into more or less square 1 - inch pieces.
2. Put the olive oil and the chopped onion in a saute' pan, and turn on the heat to medium high.  Cook and stir the onion until it becomes colored a pale gold.  Put in the sausages, cook them for about 2 minutes, then add the peppers, and cook them for 7 or 8 minutes, turning them occasionally.  Add salt and pepper, and stir well.
3. Add the tomatoes to the pan and cook them at a lively simmer for about 15 or 20 minutes, until the oil floats free of the tomatoes.
4. Empty the entire contents of the pan over cooked drained pasta and toss thoroughly.  Add the butter and grated Parmesan, toss one more time, and serve at once, with additional grated cheese on the side.















Look how small the pots and pans are! The pasta barely fit- I was worried!






This bowl plus another helping was dinner last night and lunch today! So satisfying.
