Week Recap!

Ahh this week has been so crazy and I LOVE it. I love having to be somewhere and having something to do. I've been so busy, that I have not blogged once (as you may well have noticed)! I did take photos of some of my food though for the week. Here it goes, in no particular order.

Cereal + banana + greek yogurt

Canadian Idiot

I'm watching curling and doing homework!

I started the day off right with pumpkin/banana/raisin/peanut butter oats again, with a sprinkle of cinnamon. 2.5 servings of fruit- woot!



Then blah blah blah lots of classes blah blah blah.. 

the lunch! I was planning on a different lunch today- but plans changed! So I did too. I had a slice of cheese pizza with two huge bowls plain spinach. I ate the spinach WITH the pizza- taking a big forkfull of spinach and a small bite of pizza. It was so amazing! I definitely recommend. And it kept me below 400 kcal for lunch. 



Then I went to the Spanish advisor to figure out what classes I'll get credit for in Ecuador. I will get a total of 12 credits and am now a double Spanish/Pharmacy minor. Wow. I was shocked/excited/overwhelmed- and I can't wait!

Before going to teach (!!!) Gravity, I had an apple and a muffin with cream cheese while gabbing with my parents on the phone about all the Spanish/Ecuador news.


I also had two small dark chocolate squares for some extra antioxidants ;)



Gravity went so well! I'm loving that class more than I ever thought I would, and I hope I get to teach it.

Dinner was an egg/cheese quiche, green beans and a glass of milk!


Everything was very tasty, but I'm not sure if I've had enough to eat today! I might have a small bit of greek yogurt later tonight, but I'll just see how I'm feeling.

Tuesday Today

It's weird starting the week on a Tuesday, but I don't mind. When I woke up to go to chem lab, my arms were so weak from Gravity yesterday! Ahh I love this feeling. Even now I can still feel it! Yay!

Breakfast was a peanut butter and banana sandwich; it held me over through lab and running a couple errands after! The picture only shows the inside, because I had to use the heel of the bread which isn't as pretty to look at.


After lab I went to pic up my passport-sized photos. They are one of the many steps in applying to study abroad, and I got the photo taken yesterday. The photo isn't the greatest- I know haha

I took a couple photos to the Study Abroad Office. There's one more thing off of my list!

Aaacckkk!! My eyes do look grey though which is a good thing :)


Lunch! I've been able to smell the pumpkin muffins in my room, and not having one yesterday was hard! I planned to have one today with my (conventional :( ) apple. This lunch was surprisingly filling! I think it was the combo of the cream cheese and apple.


I took a bite of apple before remembering to take a picture! whoops


I just got back from yoga and am headed to my second lab for the day in a little bit. Here's the snack I'm packing to tie me through it and Zumba before dinner tonight:

Oatmeal bar! I only have three left. Looks like I'll be baking more in the next couple weeks, once the muffins are gone though.

Sunday Fud

Breakfast! Is possibly my favorite meal of the day. Today was no exception. On the menu: pumpkin oats with honey and a pumpkin muffin!

I made instant oats like usual with boiling water, then stirred in 1/4 cup pumpkin.


I broke up the bottom half of the muffin to put on the oats.


Then used the remaining oats to "frost" the top of the muffin!



Yay! There's my beta-carotene for the day :)

Well I thought I was being lazy!

Now I look back on yesterday, though, I did finish a good chunk of homework, bake, clean and do laundry. Woot!

After my rather unhealthy lunch, I stayed on track the rest of the day. A pear and an oatmeal bar for a snack, no photo of the oatmeal bar though :(


After a couple hours my tummy was still rumbling so I had the rest of my greek yogurt (maybe 1/4-1/2 cup?) with a little bit of cereal for crunch. 



Then it was time for BAKING!! 

Ingredients:



Recipe (adapted from the one here) :

3/4-1 cup canned pumpkin puree
2 eggs
1/2 cup canola oil
1/3 cup water
1 1/2 cups brown sugar
1 3/4 cups whole wheat flour
1 tsp baking soda
3/4 tsp salt
1/2 tsp cinnamon
1 tsp pumpkin pie spice

Butter and flour a 12-muffin pan, this took me quite a while because I didn't want them to stick! Preheat oven to 350 degrees.

Mix together pumpkin, eggs, oil, water and sugar.

"Whisk together" flour, soda, salt and spices.

Add dry ingredients to pumpkin mixture and stir until combined. Then spoon into the muffin pan. I made exactly 12 muffins!

Bake for 45-50 minutes, check with a wooden toothpick to see if they're done (if you have one).

After baking! These smelled soooo good. Everyone walking through the lounge would make comments about it :)


They all came right out of the pan- no knives or anything needed. Yippee!

Hump Day!

Yay for surviving the first part of the week!

For breakfast I knew we'd be having Cosco muffins, so I looked up the calories online and they're 690 kcal each! Ouch. I brought my own skim milk and ate half a muffin, and saved the rest for my afternoon snack.

Come lunch I was STARVING. Muffins do not stick with me, no no no. I had a big plate of veggies, beans, corn, and some pulled pork. It was all very yumi, though my camera on my phone makes it look gross :/


Despite such a large lunch I was still definitely ready for my afternoon snack/dinner. I had an apple that I inhaled before photographing it, and the rest of my Cosco muffin. Yum!



Then I wasn't hungry, but my mouth still wanted something more to do, so I made some tea from the awesome care package I got today!
